Ragi puttu







Ingredients:
Ragi Flour - 2 cups
Jaggery powder - 1/2 cup
Coconut grated - 1/4 cup
Dry ginger powder - 1/2 tsp
Cardamom powder - pinch

Method:
  • Dry roast ragi flour until nice aroma comes.
  • Cool down the flour, now add water little by little and mix properly.
  • We should make as a ball but when we break it should break down.
  • Now whisk this in a mixie twice.
  • Tie in a cloth and steam it.
  • Now mix the puttu with jaggery powder, dry ginger powder, cardamom powder.
  • Add grated coconut at the end.

Pearl Millet[kambu] Puttu





Ingredients:
Pearl Millet Flour [Dry roast pearl millet and grind]
Grated Coconut
Sugar

Method:

  1. Take flour and sprinkle little salt in a bowl, mix it
  2. Then add water little by little,mix it evenly such that entire flour is getting even moisture.
  3. Try to hold the flour inside palm, if it comes in shape, then stop adding water.
  4. Whip in a mixie for one or two times.
  5. Then tie in a cheese cloth and steam it for ten minutes.
  6. Then take out and add sugar when it is hot.
  7. Add Grated coconut in the end.

Little Millet[Samai] Idiyappam






  1. Dry roast little millet[samai rice] until aroma comes.
  2. Grind it nicely.[I have grinded in flour mill]
  3. Take one cup of flour and prepare dough by adding water little by little.
  4. Dough has to be loose and then it has to be pressed in idiyappam press.
  5. Cook it in steam for 4 minutes. 
  6. Healthy idiyappam is ready.
  7. Serve with grated coconut and sugar.
  8. Or else any sevai can be prepared.
Same as Banyard Millet Idiyappam.

Onion Podi Dosa


Ingredients:
Dosa batter
Shallots, chopped lengthwise
Sesame idli podi/drumstick leaves podi [ Any podi can be used]


Method:
  1. Pour dosa batter in the center, dont spread it.
  2. Top with shallots.
  3. Then sprinkle podi. Add oil on top of dosa also such that podi will not be dry.
  4. Cook in sim.

Homemade Muesli

Corn Flakes - 3 cups [I used kellogs]
Instant oats - 2 cups
Honey - 1/3 cup + 1/3 cup
Salt - 1/2 tsp
Badam - 4 tbsp, finely sliced
Walnut - 3 tbsp, finely chopped
Dry fruits - 5 tbsp [I used dates, prunes and dry grapes]


  1. Dry roast corn flakes, oats, nuts and dry fruits together until nice aroma comes. Keep aside.
  2. Now in the same pan, add 1/3 cup homey and salt. Let it boil for few minutes until bubble comes.
  3. Now add roasted oats and  nuts mixture. Mix well until honey gets coated on all.
  4. Now boil remaining honey in a separate pan and pour it on top of cornfales mixture.
  5. Cool it and bake for 5 minutes.
  6. After baking, transfer immediately to a plate and make it to cool. Otherwise it will start sticking.
  7. Transfer to air tight container and serve with hot milk.

Thinai dosa


Thinai rice[Foxtail millet] - 1 cup
Urad dal - 1/4 cup
Raw rice -1 tsp
Fenugreek seeds - 1tsp
salt - as required

  1. Soak urad dal, fenugreek seeds and rice separately overnight.
  2. Grind urad dal and fenugreek seeds first, then add rice to the urad dal and grind.
  3. Add salt and ferment for 6 hours like regular dosa.
  4. Prepare thin dosas as they will be crispy.

Oats Idli

Here is the healthy and tasty recipe. When i was searching for oats recipes, i found this in sharmispassions website and tried.

Instant Oats - 1 cup
Wheat Rava - 1/2 cup
Fresh Curd - 1/2 cup
Carrot -1 (grated)
Mustard seeds - 1 tsp
Green Chilli - 1 tsp, finely chopped
Hing - 1/4 tsp
Coriander leaves - 2 tsp finely chopped
Soda - 1/2 tsp

  1. Dry roast oats and powder it. Keep aside.
  2. Heat oil in kadai -> mustard seeds ->grated carrot ->Curry leaves and fry for few minutes.
  3. Add oats powder, wheat rava, curd,  hing and soda.
  4. Add water to make idli batter consistency and prepare instant idli's.
