Cholam Paniyaram




Ingredients:
Idli rice - 1 cup
Raw rice - 1 cup
White Cholam[Sorghum] - 1 cup
Urad dal - 1/4 cup
Mustard Seeds - 1 tsp
Urad dal - 1/2 tsp
Shallots - handful, chopped finely
Green chillies - 3, chopped finely.
Curry leaves - few, chop if necessary.

Preparing batter:
  1. Soak rice, urad dal and cholam separately.
  2. Grind urad dal first for around ten minutes, then grind cholam along with urad dal.[I have grinded in grinder]
  3. After it gets grinded little, add rice and grind like dosa batter.
  4. Mix salt and keep for fermentation for 8 hours.
Preparing Paniyaram:
  1. Add oil in a frying pan, then add mustard seeds followed by urad dal. 
  2. Then add onions, green chillies and curry leaves. When onion turns pink add to the required batter.
  3.  Prepare paniyarams.
