Adai dosa


Ingredients:
To Soak:
Raw rice - 1 cup
Idly rice - 1 cup
Toor Dal - 1/2cup
Chana dal - 1/2 cup
Moong dal - 1/4 cup

While grinding:
Red chillies - 10
Pepper - 1tsp
Hing - one and half tsp

While preparing dosa:
Chopped shallots - 1/2 cup 

  1. Soak all the above ingredients under soak overnight.
  2. Next day grind along with ingredients "while grinding".
  3. Grind coarsely like rava such that dosa will come crispy.
  4. Add some chopped shallots while preparing dosa.
  5. Serve with aviyal or Allam Pachadi.

Nel pori urundai

Nel pori - 6 cups
Powdered jaggery - 1 and a half cups

  1. Clean the pori by removing husk from it.
  2. Add water to jaggery until immersing level and boil it.
  3. When all jaggery melted filter the impurities.
  4. Now again boil jaggery until it thickens. 
  5. Take a bowl of water, drop jaggery in it. we should be able to make ball out of it.
  6. Switch off and add pori to it.
  7. Mix evenly and make balls before it cools down.

Banyard Millet[kuthiraivali] Idiyappam

  1. Dry roast banyard millet[kuthiraivali rice] until aroma comes.
  2. Grind it nicely.[I have grinded in flour mill]
  3. Take one cup of flour and prepare dough by adding water little by little.
  4. Dough has to be loose and then it has to be pressed in idiyappam press.
  5. Cook it in steam for 4 minutes. 
  6. Healthy idiyappam is ready.
  7. Serve with grated coconut and sugar.
  8. Or else any sevai can be prepared.

Homemade Muesli

Corn Flakes - 3 cups [I used kellogs]
Instant oats - 2 cups
Honey - 1/3 cup + 1/3 cup
Salt - 1/2 tsp
Badam - 4 tbsp, finely sliced
Walnut - 3 tbsp, finely chopped
Dry fruits - 5 tbsp [I used dates, prunes and dry grapes]


  1. Dry roast corn flakes, oats, nuts and dry fruits together until nice aroma comes. Keep aside.
  2. Now in the same pan, add 1/3 cup homey and salt. Let it boil for few minutes until bubble comes.
  3. Now add roasted oats and  nuts mixture. Mix well until honey gets coated on all.
  4. Now boil remaining honey in a separate pan and pour it on top of cornfales mixture.
  5. Cool it and bake for 5 minutes.
  6. After baking, transfer immediately to a plate and make it to cool. Otherwise it will start sticking.
  7. Transfer to air tight container and serve with hot milk.

Carrot cake

Maida - 1 cup
Egg - 2
Butter - 1/4 cup
Sugar - 3/4 cup
Curd - 2 tbsp
Baking powder - 1 tsp
salt - pinch
Vanilla essence - 1/2 tsp
Milk - 2 tbsp
Grated carrot - 1/2 cup

  1. Whisk eggs until bubbles comes.
  2. Then add butter and whisk it.
  3. Add sugar and mix until sugar dissolves completely.
  4. Then add maida, curd, baking powder, salt, essence, milk and grated carrot. whisk all together without any lumps.
  5. Transfer to greased tin.
  6. Preheat oven at 180 degrees.
  7. Bake it for 35 - 40 minutes.




  • Cake is moist and tastes awesome. 
  • Could not able to take picture of full cake as my kids finished once i take it out of oven... :-)

Thinai dosa


Thinai rice[Foxtail millet] - 1 cup
Urad dal - 1/4 cup
Raw rice -1 tsp
Fenugreek seeds - 1tsp
salt - as required

  1. Soak urad dal, fenugreek seeds and rice separately overnight.
  2. Grind urad dal and fenugreek seeds first, then add rice to the urad dal and grind.
  3. Add salt and ferment for 6 hours like regular dosa.
  4. Prepare thin dosas as they will be crispy.

Garlic Roll

I made this roll using homemade multigrain atta, it has come out good but not as soft as maida roll. But when we see for healthy one, this is the best. Followed the recipe from sharmispassions.com 


For Bread:
Multigrain atta - one and a half cup
Plain Flour - 1/2 cup
Warm water - 3/4 cup
Milk - 2 tbsp
Active Dry yeast - 1/2 tbsp
Salt - 1tsp
Sugar - 1/2 tbsp
Butter - 1/2 tbsp
Sesame seeds - 1 tbsp

For garlic spread:

Salted Butter - 2 tbsp
Minced garlic - 6 cloves
Chopped coriander leaves - 1 tbsp

  1. Add warm water, milk, oil, sugar and salt. Add yeast to it and dissolve completely. Then add all flours and knead it to a soft sticky dough.
  2. Keep the dough in warm place for one hour and cover it. Dough will raise.
  3. Now knead it again with 1/2 tsp oil and spread as 1/2 inch thick chapatis and spread buttered garlic spread. Keep some spread aside for topping.
  4. Roll from one end to other. Cut into 6 pieces.
  5. Keep in a pan and apply some oil on top. Then apply some spread and sprinkle sesame seeds on top.
  6. Now allow to raise for 30 minutes.
  7. Preheat oven for 180 degrees, keep the tin near oven.
  8. Now bake it for 25-30 minutes.








  • Dough should be slightly sticky.

Healthy Modak

I have named this as healthy modak because of the stuffing with roasted green gram flour inside... :-)
For the dough:
Rice flour - 1 cup
Salt - as required
Warm water - to knead the dough
For the filling:
Roasted green gram flour - 5 tbsp
Roasted channa dal powder - 2 tbsp
Jaggery powder - 4 tbsp
Coconut - 2 tbsp, grated
  1. Prepare the dough by adding warm water to rice flour little by little.
  2. Dough has to be soft.
  3. Prepare filling by mixing all ingredients.
  4. Make modaks by stuffing the filling inside dough.
  5. Steam for 5 minutes.
  6. Healthy, yummy modak ready.

Sweet Appam



Wheat flour - 1 cup
Palm Jaggery -1 piece

Banyard millet rice flour - 3 tbsp
cardamom - 1, powder only by taking seeds
Baking soda -1/4 tsp
salt - pinch
banana - 1 big, mashed well
grated coconut - 2tbsp

  1. Powder palm Jaggery and boil in water until it gets diluted.
  2. Add wheat flour to bowl and add water and then add filtered palm jaggery water.
  3. Now add rice flour, cardamom powder, soda, mashed banana and coconut.
  4. Batter consistency should be thick like dosa batter.
  5. Pour little batter in hot oil and check, if the batter spreads add rice flour and prepare appam.

Pottukadalai Murukku



Rice flour - 1 cup
Pottukadalai  - 1/4 cup minus 1 tbsp
sesame seeds - 1 tsp
ghee - 1 tbsp
salt - as needed

  1. Grind pottukadalai and mix with rice flour, sieve it.
  2. Mix flour , salt, sesame seeds, ghee.
  3. Knead dough by adding warm water little by little. This is the first time am preparing murukku, thanks to sharmilee for this recipe.

Paneer Bread Roll

Saw the recipe in cookingandme blog and changed it a bit.

Bread slices - 10
Paneer - 200 gms
Onion - 1 [Big]
Tomato sauce - 1 tbsp
Pepper powder - 1/2 tsp
Garam Masala - 1/2 tsp
Ginger garlic paste - 1/2 tsp
Coriander leaves - to garnish

Method:
  1. Heat oil in kadai and add onion, wait until it turns color and then add ginger garlic paste.
  2. After it gets cooked, add all spice powders and saute for a while.
  3. Now add tomato sauce, saute for 2 minutes.
  4.  Garnish with coriander leaves. Now stuffing is ready.
  5. Cut the edges and roll like chapathi.
  6. Now keep the stuffing and roll it.
  7. Brush with oil/ghee and toast in dosa pan.

How to make playdough - no cream of tartar, no cooking



All purpose flour - 3/8 cups
Table Salt - 1/8 cup
Water -1/8 cup
Vegetable oil - 1 tbsp
Food colors

 Method:
  1.  Add salt, food color, water to bowl and mix well until salt dissolves completely.
  2. Then add oil followed by flour.
  3. Knead into dough. Sprinkle some flour/ water if needed.
  4. Knead it for atleast ten minutes.
  5. This measurement is for one color, repeat the same for others also.

 
  • First photo is the recent one[ pink color using rose milk essence and brown is cocoa powder]
  • Rest others are food colors bought from store.

Gobi 65






Recipe source : Vahchef


Cauliflower - 1 [Medium sized]
Curry leaves - few, chopped finely
Coriander leaves - 1/2 Bunch, chopped finely
Salt
Pepper powder - 1/2 tsp
Garam Masala - 1/2 tsp
Ginger Garlic paste -1/2 tsp
Maida - 3 tbsp
Corn flour - 4 tbsp

Method:
  1. Put cauliflower in boiled water for ten minutes to remove worms.
  2. Mix all the above ingredients.
  3. Deep fry once and keep aside.
  4. While serving, fry again with curry leaves to get more crispy cauliflower.

Oats Idli

Here is the healthy and tasty recipe. When i was searching for oats recipes, i found this in sharmispassions website and tried.

Instant Oats - 1 cup
Wheat Rava - 1/2 cup
Fresh Curd - 1/2 cup
Carrot -1 (grated)
Mustard seeds - 1 tsp
Green Chilli - 1 tsp, finely chopped
Hing - 1/4 tsp
Coriander leaves - 2 tsp finely chopped
Soda - 1/2 tsp

  1. Dry roast oats and powder it. Keep aside.
  2. Heat oil in kadai -> mustard seeds ->grated carrot ->Curry leaves and fry for few minutes.
  3. Add oats powder, wheat rava, curd,  hing and soda.
  4. Add water to make idli batter consistency and prepare instant idli's.

Yam Varuval

Senaikilangu - 2 cups
Turmeric powder - 1/4 tsp
Garam Masala - 1/2 tsp

Roast & Grind:
Red chillies - 2
Coriander seeds - 1 tsp
Jeera - 1 tsp

Seasoning:
Mustard seeds - 1 tsp
Curry leaves - few


  1. Boil water in a pan, when it starts boiling add turmeric powder and yam and cook for 10 minutes.[It should be crunchy]
  2. Now filter yam, add the grounded powder and salt. Keep aside for 10 minutes.
  3. Heat oil in a pan, do seasoning and add the marinated yam and fry.

Gongura Pulihora

This is the first time i tried puliyodarai with gongura, it has come very well. Every time i will be thinking of making healthy and tasty recipes, this too added into my list.. :-)

For preparing rice :
Rice - 1 cup
Water - 2 cups 
salt
Oil

Gongura Paste :
Gongura leaves - 1 cup,washed
Mustard seeds - 1/2 tsp
red chillies - 2
fenugreek seeds - 1/8 tsp

Seasoning :
Mustard seeds - 1 tsp
Urad dal - 1/2 tsp
Channa dal - 1 tbsp
Peanuts - 1 tbsp
Curry leaves - few


  1. Cook rice separately by adding water and salt. After cooking make it to cool down add few drops of oil.
  2. Now heat oil in kadai, add mustard seeds and fenugreek seeds, when it splutters add red chillies and keep aside.
  3. Now in the same oil, add gongura leaves and cook for around 6 minutes.
  4. Grind gongura leaves and mustard seed mixture together.
  5. Mix with rice evenly.
  6.  Heat oil in kadai and do seasoning and add to rice.
  7. Gongura pulihora is ready.. serve with vadam.

Mint Paratha

Dried mint leaves powder - 2tbsp
Cumin powder - 1/4 tsp
White pepper powder - 1/2 tsp
whole wheat atta - 2 cups
Salt
Oil




  1. Mix atta,salt and few tsp of oil and prepare soft dough. keep aside for minimum of half an hour.
  2. Mix all powders with little salt.
  3. When preparing parathas, roll like chapathi, apply flour on top and spread the powder and fold like parathas. I have not clicked the pictures of rolling.Next time will try to do for sure.
  4. Apply oil and cook. You can use butter for cooking which will be delicious.

Simple Pasta

Macaroni - 2 cups
Carrot - 2 [ chopped lengthwise]
Beans - 4 [chopped lengthwise]
Green Peas  - handful
capsicum -  1/2 cup
Spring Onions - handful
Egg - 3
White pepper - 1 tsp
Mustard seeds powder - 1 tsp
Tomato sauce - optional


  1.  Heat oil in kadai, cook egg and keep aside.
  2. In the same pan, add capsicum and fry for 3 minutes. 
  3. All vegetables should not be overcooked, it has to be crunchy.
  4. In the meanwhile, take another pan with oil, add carrot, beans, green peas for 4 minutes, then add spring onions and cook for 2 minutes and add spice powders.
  5. Add tomato sauce if needed.
  6. Now cook macaroni by adding water, salt and 2 tsp of oil.
  7. After it is cooked, add with  the cooked vegetables.

pori urundai

Puff rice - 2 and 1/4  cup
Powdered Jaggery -1/2 cup
Water - 1/4 cup
 
  1. Boil water and add jaggery, after it gets dissolved filter it to remove impurities.
  2. Again boil jaggery until you get thick. In this stage if u drop jaggery in water it should not dissolve and also you should be able to make balls out of it.
  3. Now add jaggery to puff rice, grease your hand with ghee and make balls.
